🫐🍰 Blueberry Vanilla Mug Cake

For the Mug Cake

  • 4 tbsp all-purpose flour
  • 2 tbsp granulated sugar
  • ΒΌ tsp baking powder
  • Pinch of salt
  • 3 tbsp milk
  • 2 tbsp vegetable oil (or melted butter)
  • Β½ tsp vanilla extract
  • ΒΌ cup (35 g) blueberries (fresh or frozen)

Optional Toppings

  • Whipped cream
  • Vanilla ice cream
  • Powdered sugar
  • Extra blueberries

Instructions

Step 1: Prepare the Mug

Choose a microwave-safe mug (10–12 oz / 300–350 ml).
Lightly grease the inside with a little oil or butter to prevent sticking.


Step 2: Mix Dry Ingredients

Add to the mug:

  • All-purpose flour

  • Granulated sugar

  • Baking powder

  • A pinch of salt

Stir well with a fork until fully combined and no lumps remain.


Step 3: Add Wet Ingredients

Add:

  • Milk

  • Vegetable oil (or melted butter)

  • Vanilla extract

Stir until the batter is smooth.
Make sure to scrape the bottom and sides of the mug so all flour is mixed in.


Step 4: Add Blueberries

Gently fold the blueberries into the batter.

If using frozen blueberries, add them directly from the freezer (do not thaw).


Step 5: Microwave

Place the mug in the microwave.

Cook on HIGH power for 60–90 seconds.
Start checking at 60 seconds.

The cake is done when:

  • The top looks set

  • It springs back lightly when touched

Do not overcook, or the cake will turn dry.


Step 6: Rest and Serve

Let the mug cake rest for 1–2 minutes (it will continue setting).

Serve warm, straight from the mug, or add:

  • Whipped cream

  • Vanilla ice cream

  • Powdered sugar

  • Extra blueberries


Step 7: Enjoy
