Ingredients
• 1 cup cottage cheese
• 2 large eggs
• 1 cup rolled oats
• 1 apple, peeled and diced small
• 1 teaspoon cinnamon
• 1/2 teaspoon baking powder
• 1/4 teaspoon vanilla extract
• Pinch of salt
Instructions
1. In a blender, combine cottage cheese, eggs, rolled oats, baking powder, vanilla extract, and salt. Blend until completely smooth and creamy.
2. Transfer the batter to a bowl and gently stir in the diced apple and cinnamon until evenly distributed.
3. Heat a nonstick griddle or skillet over medium heat and lightly grease.
4. Pour about 1/4 cup of batter per pancake onto the heated surface.
5. Cook for 2–3 minutes until bubbles form and edges set.
6. Flip and cook another 2 minutes until golden brown and cooked through.
7. Serve warm with butter and maple syrup.
