For the Baked Feta Bites:

  • 1 block (8 oz) feta cheese, crumbled
  • 1/2 cup cream cheese, softened
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 810 sheets phyllo dough (thawed if frozen)
  • 2 tablespoons unsalted butter, melted (for brushing)
  • Fresh parsley, chopped (for garnish)
  • Optional: olives or sun-dried tomatoes, chopped, for added flavor

Instructions

Prepare the Feta Filling:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Prepare the Filling: In a mixing bowl, combine the crumbled feta cheese, cream cheese, olive oil, honey, dried oregano, garlic powder, salt, and pepper. Stir until the mixture is smooth and creamy. If you’re adding olives or sun-dried tomatoes, stir them into the mixture at this point.

Assemble the Feta Bites:

  1. Prepare the Phyllo Dough: Lay one sheet of phyllo dough on a clean surface and brush it lightly with melted butter. Place a second sheet on top and brush with more butter. Repeat this step until you’ve layered about 4-5 sheets of phyllo dough.
  2. Cut the Phyllo: Using a sharp knife or kitchen scissors, cut the phyllo dough into squares (about 3 inches by 3 inches) to form the individual bites.
  3. Add the Filling: Place a small spoonful of the feta mixture in the center of each phyllo square. Fold the edges of the phyllo over the filling to form a little packet or triangle. Press the edges to seal the filling inside.
  4. Brush with Butter: Once all the bites are assembled, brush the top of each one with more melted butter.

Bake the Feta Bites:

  1. Bake: Place the prepared bites on the lined baking sheet and bake for 15-20 minutes, or until the phyllo pastry is golden brown and crispy.
  2. Cool Slightly: Once baked, remove the feta bites from the oven and let them cool slightly before serving.

Serve the Feta Bites:

  1. Garnish and Serve: Garnish with freshly chopped parsley and serve immediately while they’re warm and crispy.
