Banana Walnut Cottage Cheese Breakfast Muffins

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 small ripe banana, mashed
  • 1/2 cup almond flour (or oat flour for a softer texture)
  • 1 tsp vanilla extract
  • 12 tsp honey or maple syrup (optional for sweetness)
  • 1 tsp baking powder

Instructions

  • Preheat the Oven: Start by preheating your oven to 350°F (175°C) and line a muffin pan with paper liners or lightly grease it.
  • Mix Wet Ingredients: In a mixing bowl, combine the cottage cheese, eggs, and mashed banana. Stir until well blended.
  • Add Dry Ingredients: Incorporate the almond flour (or oat flour), vanilla extract, honey or maple syrup (if using), and baking powder. Mix until just combined; be careful to not overmix.
  • Fill the Muffin Pan: Pour the batter into the prepared muffin pan, filling each cup about two-thirds full.
  • Bake: Place the muffin pan in the oven and bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  • Cool: After baking, allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
