- 1 cup cottage cheese
- 2 large eggs
- 1 small ripe banana, mashed
- 1/2 cup almond flour (or oat flour for a softer texture)
- 1 tsp vanilla extract
- 1–2 tsp honey or maple syrup (optional for sweetness)
- 1 tsp baking powder
Instructions
- Preheat the Oven: Start by preheating your oven to 350°F (175°C) and line a muffin pan with paper liners or lightly grease it.
- Mix Wet Ingredients: In a mixing bowl, combine the cottage cheese, eggs, and mashed banana. Stir until well blended.
- Add Dry Ingredients: Incorporate the almond flour (or oat flour), vanilla extract, honey or maple syrup (if using), and baking powder. Mix until just combined; be careful to not overmix.
- Fill the Muffin Pan: Pour the batter into the prepared muffin pan, filling each cup about two-thirds full.
- Bake: Place the muffin pan in the oven and bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Cool: After baking, allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
