Blueberry Cottage Cheese Oat Bars

Description

Soft, wholesome oat bars packed with blueberries and protein-rich cottage cheese.
Perfect for breakfast, snacks, or meal prep.


Ingredients

• 2 cups rolled oats

• 1 cup cottage cheese

• 1/2 cup honey or maple syrup

• 1/2 cup almond milk (or your preferred milk)

• 1 cup fresh or frozen blueberries

• 1 ripe banana, mashed

• 1 teaspoon vanilla extract

• 1 teaspoon baking powder

• 1/2 teaspoon cinnamon

• 1/4 teaspoon salt

• 1/4 cup chopped nuts (optional, for added crunch)


Instructions

1. Preheat oven to 350°F (175°C) and prepare an 8×8 inch baking dish.

2. Mix rolled oats, baking powder, cinnamon, and salt in a large bowl.

3. Whisk cottage cheese, honey or maple syrup, almond milk, mashed banana, and vanilla extract until smooth.

4. Combine wet and dry ingredients until fully mixed.

5. Gently fold in blueberries and chopped nuts if using.

6. Spread batter evenly in prepared dish and press lightly.

7. Bake for 30–35 minutes until lightly golden and set.

8. Cool for 10 minutes before slicing into bars.
