  • Juice of 1/2 lemon
  • 1/2 cup fresh blueberries (plus extra for topping)
  • 1/2 teaspoon vanilla extract (optional)

Instructions

Prepare the Chia Pudding:

  1. Combine Ingredients: In a medium bowl or jar, mix together the chia seeds, almond milk, lemon zest, lemon juice, vanilla extract (if using), and maple syrup or honey (if using).
  2. Stir Well: Stir the mixture well to ensure the chia seeds are evenly distributed and not clumped together.
  3. Let it Set: Cover the bowl or jar and place it in the refrigerator for at least 2 hours, or overnight for best results. The chia seeds will absorb the liquid and thicken into a pudding-like consistency.

Assemble the Jars:

  1. Layer the Pudding and Blueberries: Once the chia pudding has set, give it a good stir. Start layering the pudding into small jars or glasses. Add a spoonful of fresh blueberries on top of each layer of pudding.
  2. Add More Layers: Repeat this process to create as many layers as desired, finishing with a layer of blueberries on top.
  3. Garnish (Optional): Add a bit of extra lemon zest or a few mint leaves for a decorative touch, if desired.
