- 1 cup cottage cheese
- 1 cup rolled oats
- 1 cup blueberries
- 1 teaspoon vanilla extract
- 1 tablespoon honey
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1 egg
- 1/4 cup milk
Instructions
- Preheat & Prepare: Preheat the oven to 350°F (175°C) and grease a mini muffin tin or line it with silicone liners.
- Blend Ingredients: In a mixing bowl, combine cottage cheese, rolled oats, blueberries, vanilla extract, honey, baking powder, cinnamon, egg, and milk. Stir until thoroughly mixed.
- Fill the Muffin Tin: Spoon the batter into the prepared mini muffin tin, filling each cup about 3/4 full.
- Bake: Bake for 12-15 minutes, or until the pancake bites are set and lightly golden on top.
