Instructions
Prepare the Lobster
- Prepare the Lobster Meat: Using kitchen shears, cut the lobster shells down the center and carefully remove the meat. Set aside the shells for another use, like making stock.
- Cut into Pieces (Optional): For easier handling, cut the lobster meat into large chunks.
Poach in Butter
- Melt the Butter: In a large skillet over low heat, add the water and let it come to a simmer. Gradually whisk in the butter pieces to create a smooth, emulsified sauce.
- Add Salt and Herbs: Stir in the salt and any desired herbs, such as thyme or tarragon, to infuse flavor.
- Add the Lobster: Gently place the lobster meat into the butter. Ensure the lobster is fully submerged for even cooking.
- Poach Until Tender: Let the lobster poach in the butter for about 5-7 minutes, or until the meat is opaque and tender. Use a spoon to occasionally baste the lobster with the butter for extra flavor.
Finish and Serve
- Plate the Lobster: Remove the lobster from the butter using tongs and place it on a serving plate.
- Serve with Lemon Wedges: Add lemon wedges for squeezing over the lobster.
- Drizzle with Butter: Spoon some of the poaching butter over the lobster before serving.
