For the Crust

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, chilled and cubed
  • ¼ teaspoon salt
  • 46 tablespoons ice water

For the Filling

  • 34 medium apples (such as Granny Smith or Honeycrisp), peeled and sliced
  • ½ cup granulated sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg (optional)
  • 2 tablespoons lemon juice
  • ½ cup caramel sauce (store-bought or homemade)

Instructions

Prepare the Crust

  1. Combine Ingredients: In a large bowl, mix the all-purpose flour and salt. Add the cubed butter and mix until the mixture resembles coarse crumbs.
  2. Add Ice Water: Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Do not overmix.
  3. Chill the Dough: Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Filling

  1. Mix the Apples: In a large bowl, combine the sliced apples, granulated sugar, cinnamon, nutmeg (if using), and lemon juice. Toss until the apples are well coated.

Assemble the Galette

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Roll Out the Dough: On a lightly floured surface, roll out the chilled dough into a 12-inch circle, about ¼-inch thick.
  3. Transfer to Baking Sheet: Carefully transfer the dough to a parchment-lined baking sheet.
  4. Add Filling: Arrange the apple mixture in the center of the dough, leaving a 2-inch border around the edges.
  5. Fold the Edges: Gently fold the edges of the dough over the apples, pleating as you go to create a rustic look.

Bake the Galette

  1. Drizzle with Caramel: Drizzle half of the caramel sauce over the apple filling.
  2. Bake: Bake in the preheated oven for 35-40 minutes or until the apples are tender and the crust is golden brown.
  3. Cool Slightly: Remove from the oven and let cool for 10-15 minutes.

Serve

  1. Drizzle with Remaining Caramel: Drizzle the remaining caramel sauce over the top of the galette just before serving.
  2. Enjoy: Slice and serve warm or at room temperature, optionally with ice cream.
