  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika

  • ½ teaspoon cumin
  • 2 tablespoons tomato paste or taco sauce
  • ¼ cup beef broth or water

For the Burritos

  • 68 large flour tortillas
  • 2 cups shredded cheese (cheddar, mozzarella, Monterey Jack, or a blend)
  • 1 tablespoon butter or oil (for crisping)

Optional Add-Ins

  • Cooked rice (white or Mexican-style)
  • Refried beans or black beans
  • Sliced jalapeños
  • Corn kernels
  • Chopped fresh cilantro
