- 8 tbsp salsa verde + 2 tbsp chipotle sauce (from a can of chipotles in adobo)
- 15 oz cooked shredded chicken
- 2 1/2 tsp taco seasoning (or cumin + garlic powder)
- 2 1/2 cups diced bell pepper
- 1 1/4 cups diced zucchini (or onion)
- 2 1/2 oz shredded pepper jack (or Mexican blend)
- Toppings: 4 tbsp cilantro, 4 tbsp green onion, 2–3 small avocados, 2/3 cup Greek yogurt/sour cream, lime wedges
Instructions
- Blend the cottage cheese, salsa verde, and chipotle sauce until smooth and creamy.
- Combine the mixture with the shredded chicken and taco seasoning, then gently fold in the diced bell peppers and zucchini.
