  • 8 tbsp salsa verde + 2 tbsp chipotle sauce (from a can of chipotles in adobo)
  • 15 oz cooked shredded chicken
  • 2 1/2 tsp taco seasoning (or cumin + garlic powder)
  • 2 1/2 cups diced bell pepper
  • 1 1/4 cups diced zucchini (or onion)
  • 2 1/2 oz shredded pepper jack (or Mexican blend)
  • Toppings: 4 tbsp cilantro, 4 tbsp green onion, 2–3 small avocados, 2/3 cup Greek yogurt/sour cream, lime wedges

Instructions

  • Blend the cottage cheese, salsa verde, and chipotle sauce until smooth and creamy.
  • Combine the mixture with the shredded chicken and taco seasoning, then gently fold in the diced bell peppers and zucchini.
  • Distribute the mixture evenly into 5 bowls and top with shredded cheese.
  • Microwave for 1–2 minutes or bake in a preheated oven at 375°F (190°C) for 10–12 minutes, or until bubbly.
