  • 1/2 teaspoon salt
  • 1 avocado, diced
  • 1 cucumber, finely diced
  • 1/4 cup mayonnaise
  • 1 tablespoon Sriracha sauce (adjust to taste)
  • 1 teaspoon sesame oil
  • 2 tablespoons soy sauce (for serving)
  • 1 tablespoon sesame seeds
  • Chopped green onions (for garnish)
  • Nori sheets, cut into small strips (optional, for garnish)

Instructions

Prepare the Rice

  1. Season the Rice: Mix rice vinegar, sugar, and salt in a small bowl until dissolved. Pour over the cooked sushi rice and gently fold to combine. Let cool to room temperature.

Prepare the Shrimp and Sauce

  1. Cut the Shrimp: Chop the cooked shrimp into small pieces.
  2. Make the Spicy Sauce: Combine mayonnaise, Sriracha, and sesame oil in a bowl. Mix half the sauce with the chopped shrimp and reserve the other half for drizzling.

Assemble the Sushi Stacks

  1. Prepare a Mold: Use a round mold or the rim of a glass for stacking.
  2. Layer the Ingredients:
    • Start with a layer of sushi rice at the base.
    • Add a layer of diced avocado.
    • Place a layer of cucumber.
    • Top with the spicy shrimp mixture.

Finish and Serve

  1. Remove the Mold: Gently lift the mold to reveal the stack.
  2. Garnish: Drizzle with reserved spicy mayo, sprinkle sesame seeds, green onions, and nori strips.
  3. Serve: Pair with soy sauce on the side for dipping.
