For the Roll Ups

  • 68 turkey breast cutlets (pounded thin)
  • 2 cups prepared stuffing (homemade or store-bought)
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 teaspoon dried thyme or poultry seasoning

For the Gravy

  • 2 cups turkey or chicken broth
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste

Optional Garnish

  • Fresh parsley, chopped
  • Cranberry sauce for serving

Instructions

Prepare the Turkey Roll Ups

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
  2. Season the Turkey: Season both sides of the turkey cutlets with salt, pepper, and dried thyme.
  3. Add Stuffing: Place a heaping spoonful of prepared stuffing onto each turkey cutlet.
  4. Roll and Secure: Carefully roll up each cutlet and secure with a toothpick or kitchen twine.
  5. Arrange in Dish: Place the roll-ups seam-side down in the greased baking dish.

Bake the Roll Ups

  1. Bake: Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes or until the turkey is cooked through and lightly browned.

Prepare the Gravy

  1. Make a Roux: Melt butter in a small saucepan over medium heat. Add the flour and whisk constantly for 1-2 minutes.
  2. Add Broth: Slowly pour in the broth while whisking, ensuring no lumps form.
  3. Simmer: Continue to cook until the gravy thickens, about 5-7 minutes. Season with salt and pepper to taste.

Finish and Serve

  1. Drizzle with Gravy: Remove the toothpicks or twine from the roll-ups and drizzle with the prepared gravy.
  2. Garnish: Sprinkle with fresh parsley and serve with a dollop of cranberry sauce, if desired.
