- 1 cup cottage cheese
- 1 cup rolled oats
- 2 medium apples, peeled and diced
- 1/4 cup unsweetened applesauce
- 2 teaspoons cinnamon
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a large mixing bowl, combine the cottage cheese, rolled oats, applesauce, diced apples, vanilla extract, cinnamon, salt, and baking powder. Stir until all ingredients are thoroughly mixed.
- Fold in the chopped walnuts if you’re incorporating them.
- Pour the mixture into the prepared baking dish, spreading it evenly.
- Bake for 30-35 minutes, or until the top is set and lightly golden. A toothpick inserted in the center should come out clean.
- Allow the bars to cool in the pan for 10 minutes before cutting them into squares.
