Cottage Cheese Apple Cinnamon Roll Muffins

Soft, moist, and warmly spiced muffins with tender apple pieces in every bite.
Perfect for breakfast, brunch, or an afternoon treat.


Ingredients

• 1 cup cottage cheese (240 g)

• 1 cup all-purpose flour (120 g)

• ½ cup sugar (100 g)

• ½ cup diced apples (about 1 small apple, 75 g)

• ¼ cup milk (60 ml)

• 2 large eggs

• 1 tsp vanilla extract (5 ml)

• 1 tsp baking powder

• ½ tsp baking soda

• 1 tsp cinnamon

• ¼ tsp nutmeg

• ¼ tsp salt

• ¼ cup melted butter (60 g)


Instructions

1. Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin tin.

2. Whisk cottage cheese, milk, eggs, and vanilla until mostly smooth.

3. In another bowl, whisk flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

4. Stir dry ingredients into wet mixture until just combined. Fold in diced apples and melted butter.

5. Fill muffin cups two-thirds full. Bake 18–20 minutes until a toothpick comes out clean.

6. Cool for 5 minutes in the tin, then transfer to a wire rack. Serve warm or store for later.
