Cottage Cheese Banana Oat Pancake Bites

Soft, protein-packed pancake bites made with banana, oats, and cottage cheese. Perfect for breakfast, meal prep, or a quick wholesome snack.


Ingredients

• 1 cup rolled oats

• 1 large ripe banana, mashed

• 1/2 cup cottage cheese

• 2 large eggs

• 1 tsp vanilla extract

• 1/2 tsp ground cinnamon

• 1/2 tsp baking powder

• Pinch of salt

• Butter or oil, for frying

• Maple syrup or nut butter, for serving (optional)


Instructions

1. In a large bowl, combine rolled oats, ground cinnamon, baking powder, and salt.

2. In a separate bowl, mash the banana until smooth. Add cottage cheese, eggs, and vanilla extract. Whisk until creamy.

3. Pour the wet mixture into the dry ingredients and stir until fully combined. Let rest for 5 minutes.

4. Heat a non-stick skillet over medium heat and lightly grease with butter or oil.

5. Spoon batter into bite-sized rounds. Cook 3–4 minutes per side until golden brown and cooked through.

6. Serve warm with maple syrup or nut butter if desired.
