- 1 cup cottage cheese
- 1 cup Greek yogurt
- 2 large eggs
- ¼ cup honey or preferred low-calorie sweetener
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- Pinch of salt
Instructions
- Prepare the Mixture: In a blender, combine the cottage cheese, Greek yogurt, eggs, honey, vanilla extract, lemon juice, cornstarch, and salt until smooth and creamy.
- Fill the Molds: Spoon the mixture into silicone mini muffin molds, filling each about ¾ full to ensure they have space to rise.
- Bake: Bake in a preheated oven at 325°F (163°C) for 15–20 minutes or until the bites are set and slightly golden.
- Cool & Serve: Allow to cool completely before removing from the molds. Enjoy them chilled or at room temperature!
