Instructions
Preheat the Oven
- Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish or a similar-sized casserole dish.
Prepare the Mixture
- Whisk Eggs: In a large mixing bowl, crack the eggs and whisk them until well combined.
- Add Cottage Cheese: Stir in the cottage cheese until fully incorporated.
- Mix in Vegetables: Add the chopped spinach, bell pepper, onion, garlic powder, onion powder, salt, and black pepper to the egg mixture. Mix until evenly combined.
- Add Shredded Cheese: Fold in the shredded cheese, reserving a small amount for topping if desired.
Transfer to Baking Dish
- Pour Mixture: Pour the egg and cottage cheese mixture into the prepared baking dish, spreading it out evenly.
- Top with Cheese: Sprinkle the reserved cheese on top if using.
Bake the Casserole
- Bake: Place the dish in the preheated oven and bake for 40-45 minutes, or until the center is set and the top is lightly golden.
- Cool Slightly: Once done, remove from the oven and let it cool for about 5 minutes before slicing.
Serve
- Slice and Serve: Cut into squares and serve warm, garnished with fresh herbs or sliced tomatoes and avocado if desired.
