  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 cup chopped spinach (fresh or frozen, thawed and drained)
  • ½ cup diced bell pepper (any color)
  • ½ cup chopped onion
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For Garnish (Optional)

  • Fresh herbs (such as parsley or chives)
  • Sliced tomatoes or avocado

Instructions

Preheat the Oven

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish or a similar-sized casserole dish.

Prepare the Mixture

  1. Whisk Eggs: In a large mixing bowl, crack the eggs and whisk them until well combined.
  2. Add Cottage Cheese: Stir in the cottage cheese until fully incorporated.
  3. Mix in Vegetables: Add the chopped spinach, bell pepper, onion, garlic powder, onion powder, salt, and black pepper to the egg mixture. Mix until evenly combined.
  4. Add Shredded Cheese: Fold in the shredded cheese, reserving a small amount for topping if desired.

Transfer to Baking Dish

  1. Pour Mixture: Pour the egg and cottage cheese mixture into the prepared baking dish, spreading it out evenly.
  2. Top with Cheese: Sprinkle the reserved cheese on top if using.

Bake the Casserole

  1. Bake: Place the dish in the preheated oven and bake for 40-45 minutes, or until the center is set and the top is lightly golden.
  2. Cool Slightly: Once done, remove from the oven and let it cool for about 5 minutes before slicing.

Serve

  1. Slice and Serve: Cut into squares and serve warm, garnished with fresh herbs or sliced tomatoes and avocado if desired.
