Soft, fluffy, and perfectly spiced, these Cottage Cheese Pancake Bites are an easy, protein-packed breakfast option. Make them in the air fryer or oven for a quick and delicious treat.
Ingredients
• 1 cup cottage cheese (full-fat or low-fat both work beautifully)
• 3 large eggs
• 1/3 cup rolled oats (old-fashioned work best)
• 2 tablespoons pure maple syrup
• 1 teaspoon vanilla extract
• 1/2 teaspoon ground cinnamon
• 1/4 teaspoon salt
• 1/2 teaspoon baking powder
• 1 medium apple, peeled and finely diced (Honeycrisp or Gala are perfect)
• Cooking spray or oil for greasing
Instructions
1. Preheat air fryer to 350°F (175°C) or oven to 375°F (190°C).
2. Blend cottage cheese, eggs, oats, maple syrup, vanilla, cinnamon, salt, and baking powder until smooth.
3. Transfer to a bowl and fold in diced apple. Let rest 5 minutes.
4. Grease mini muffin tin and fill each cavity 2/3 full.
5. Air fry 8–10 minutes or bake 12–15 minutes until golden and a toothpick comes out clean.
6. Cool 2–3 minutes before removing. Serve warm with desired toppings.
