Description

A soft and tender vanilla breakfast loaf enriched with cream cheese for extra moisture and flavor. Perfect for easy mornings or relaxed brunches.


Ingredients

• 2 large eggs

• 3/4 cup granulated sugar

• 4 oz cream cheese, softened

• 1/3 cup neutral oil

• 1 cup milk

• 1 teaspoon vanilla extract

• 2 cups all-purpose flour

• 1 teaspoon baking powder

• Pinch of salt


Instructions

1. Preheat the oven to 350°F (175°C) and generously grease a standard loaf pan.

2. Whisk the eggs and sugar together until pale and slightly thickened.

3. Beat in the softened cream cheese until smooth.

4. Stir in the oil, milk, and vanilla extract until cohesive.

5. Whisk together the flour, baking powder, and salt in a separate bowl.

6. Gently fold the dry ingredients into the wet mixture until just combined.

7. Pour the batter into the prepared loaf pan and level the top.

8. Bake for 45–50 minutes, until set and a toothpick comes out clean.

9. Cool slightly in the pan, then transfer to a wire rack to cool completely before slicing.
