For the Spinach Balls:

  • 2 cups finely chopped fresh spinach (or thawed frozen spinach, squeezed dry)
  • 1 cup breadcrumbs (whole-wheat or regular)
  • 1 cup grated Parmesan cheese
  • 2 large eggs, beaten
  • 1/4 cup melted butter
  • 1/4 cup finely chopped onion
  • 1 tablespoon garlic powder
  • 1 tablespoon dried Italian herbs (basil, oregano, parsley)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

Prepare the Spinach Mixture

  1. Prepare Spinach: If using frozen spinach, thaw and squeeze it well to remove excess water. If using fresh spinach, chop finely.
  2. Mix Ingredients: In a large mixing bowl, combine the spinach, breadcrumbs, Parmesan cheese, eggs, melted butter, chopped onion, garlic powder, Italian herbs, salt, and pepper. Stir until all ingredients are well combined.

Form the Spinach Balls

  1. Shape the Balls: Using your hands, form the mixture into balls about 1 inch in diameter. Place them on a greased baking sheet or one lined with parchment paper.

Bake the Spinach Balls

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Bake the Balls: Bake the spinach balls for 18-20 minutes, or until they are lightly golden on the outside and cooked through.
  3. Cool Slightly: Allow the spinach balls to cool for a few minutes before serving.

Serve

  1. Serve the Spinach Balls: Arrange the warm spinach balls on a platter and garnish with a sprinkle of extra Parmesan or fresh herbs if desired.
