  • 3 large eggs, at room temperature
  • ¾ cup granulated sugar
  • Zest of 2 lemons
  • ¼ cup freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder (gluten-free, if needed)
  • ¼ teaspoon salt

For Finishing (Optional)

  • Powdered sugar, for dusting
  • Fresh berries (raspberries, blueberries, or strawberries)
  • Whipped cream or lightly sweetened mascarpone
  • Toasted sliced almonds
