Instructions
- Prep Oven & Batter: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper. In a bowl, combine egg yolks, cottage cheese, vanilla extract, cornstarch, and sweetener until smooth.
- Whip & Fold: Beat the egg whites with an electric mixer until stiff peaks form. Gently fold the whipped egg whites into the yolk mixture until well combined. Carefully fold in the blueberries to avoid breaking them.
- Bake: Scoop fluffy rounds of the batter onto the prepared baking sheet (this recipe makes about 5–6 pieces). Bake in the preheated oven for 25–30 minutes, or until golden and set. Allow to cool slightly before serving.
