For the Pasta
- 8 ounces angel hair pasta
For the Garlic Shrimp Scampi
- 1 pound large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup white wine or chicken broth
- 1 lemon, juiced and zested
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
Cook the Pasta
- Boil Water: In a large pot, bring salted water to a boil.
- Cook Pasta: Add the angel hair pasta and cook according to package instructions until al dente.
- Reserve Pasta Water: Before draining, reserve 1/2 cup of pasta water.
- Drain and Set Aside: Drain the pasta and set aside.
Prepare the Garlic Shrimp Scampi
- Heat Butter: In a large skillet, melt the butter over medium heat.
- Sauté Garlic: Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.
- Add Shrimp: Add the shrimp to the skillet, cooking for 2-3 minutes until they turn pink and opaque.
- Deglaze: Pour in the white wine (or chicken broth) and lemon juice, scraping the bottom of the skillet to deglaze.
- Add Zest and Parsley: Stir in the lemon zest and chopped parsley, and season with salt and pepper to taste.
Combine Pasta and Sauce
- Toss with Pasta: Add the cooked angel hair pasta to the skillet, tossing to combine with the shrimp and sauce.
- Add Reserved Pasta Water: If needed, add a little reserved pasta water to loosen the sauce.
- Serve Immediately: Remove from heat and serve immediately.
