Garlic Shrimp Scampi with Angel Hair Pasta

For the Pasta

  • 8 ounces angel hair pasta

For the Garlic Shrimp Scampi

  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup white wine or chicken broth
  • 1 lemon, juiced and zested
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

Cook the Pasta

  1. Boil Water: In a large pot, bring salted water to a boil.
  2. Cook Pasta: Add the angel hair pasta and cook according to package instructions until al dente.
  3. Reserve Pasta Water: Before draining, reserve 1/2 cup of pasta water.
  4. Drain and Set Aside: Drain the pasta and set aside.

Prepare the Garlic Shrimp Scampi

  1. Heat Butter: In a large skillet, melt the butter over medium heat.
  2. Sauté Garlic: Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.
  3. Add Shrimp: Add the shrimp to the skillet, cooking for 2-3 minutes until they turn pink and opaque.
  4. Deglaze: Pour in the white wine (or chicken broth) and lemon juice, scraping the bottom of the skillet to deglaze.
  5. Add Zest and Parsley: Stir in the lemon zest and chopped parsley, and season with salt and pepper to taste.

Combine Pasta and Sauce

  1. Toss with Pasta: Add the cooked angel hair pasta to the skillet, tossing to combine with the shrimp and sauce.
  2. Add Reserved Pasta Water: If needed, add a little reserved pasta water to loosen the sauce.
  3. Serve Immediately: Remove from heat and serve immediately.
