Ingredients
• 1 cup cottage cheese
• 1 large egg
• 1 cup oat flour (or almond flour for low-carb)
• 1 tsp baking powder
• ¼ tsp salt
• Optional: ¼ cup shredded cheddar cheese or fresh herbs (chives, parsley, or dill)
Instructions
1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a bowl, mix cottage cheese and egg until combined.
3. Add oat flour, baking powder, and salt, mixing until a thick dough forms.
4. Fold in optional cheese or herbs if using.
5. Scoop dough into 6 rounds on the baking sheet.
6. Bake for 18–20 minutes until puffed and lightly golden.
7. Serve warm or cool slightly before storing.
