Ingredients

2 large eggs

⅔ cup olive oil

⅔ cup brown sugar

⅓ cup raw honey

2 teaspoons vanilla extract

2 cups shredded zucchini (skins left on)

2 cups all-purpose flour

1 teaspoon salt

1 teaspoon baking soda

1 teaspoon baking powder

1½ teaspoons cinnamon


Instructions

  1. Preheat oven to 350°F (175°C). Grease or spray a loaf pan with baking spray.
  2. Shred zucchini using a food processor, chopper, or box grater—do not peel.
  3. In a large bowl, whisk together eggs, olive oil, brown sugar, honey, vanilla, and shredded zucchini until well blended.
  4. Add flour, salt, baking soda, baking powder, and cinnamon.
  5. Stir gently until just combined; avoid overmixing.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 5–10 minutes before transferring to a wire rack to cool completely.
