How to Freeze Zucchini

  • zucchini (any size – large ones should be halved and seeded)

Instructions

  • Grate the zucchini: If you’re working with large zucchini, cut them in half first and scoop out the seeds.
  • Drain the Zucchini: Place the shredded zucchini in a colander set over a bowl and let it drain for 30 minutes.
  • Squeeze Out Excess Liquid: Press down on the zucchini to remove any additional liquid.
  • Prepare for Freezing: Measure 2 cups of zucchini and place into quart-sized freezer bags.
  • Label and Freeze: Ensure each bag is labeled, and then freeze. The zucchini can be stored in the freezer for up to 1 year.
