For the Enchiladas

  • 8 large flour tortillas
  • 6 large eggs
  • 1 cup cooked and crumbled sausage (or your choice of protein)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup black beans (drained and rinsed)
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • Salt and pepper, to taste
  • 1 teaspoon cumin (optional)

For the Enchilada Sauce

  • 1 can (15 oz) enchilada sauce
  • 1/2 cup chicken or vegetable broth
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

Prepare the Filling

  1. Whisk Eggs: In a bowl, whisk together the eggs, salt, pepper, cumin (if using), and set aside.
  2. Sauté Vegetables: Turn the Instant Pot to sauté mode. Add diced onions and bell peppers, cooking until softened, about 3-4 minutes.
  3. Add Protein: Stir in the crumbled sausage (or chosen protein) and cook until heated through.
  4. Add Eggs: Pour the whisked eggs over the mixture in the pot. Cook for about 3-4 minutes, stirring occasionally until the eggs are fully cooked.
  5. Add Beans: Stir in the black beans and half of the cheese, mixing until combined.

Assemble the Enchiladas

  1. Fill Tortillas: Lay out the tortillas and spoon the egg mixture evenly into each tortilla, then roll them up tightly.
  2. Place in Pot: Pour a little enchilada sauce into the bottom of the Instant Pot. Place the rolled enchiladas seam side down in a single layer.
  3. Add Sauce: Pour the remaining enchilada sauce over the top of the enchiladas, followed by the chicken or vegetable broth.

Cook in Instant Pot

  1. Seal and Cook: Close the lid of the Instant Pot, ensuring the vent is sealed. Set to manual high pressure for 5 minutes.
  2. Natural Release: Once cooking is complete, let the pressure release naturally for 5 minutes, then do a quick release for any remaining pressure.

Serve

  1. Garnish and Enjoy: Carefully remove the enchiladas from the pot. Top with the remaining cheese and let it melt before serving. Garnish with your favorite toppings.
