- 1 cup ricotta cheese
- 1 tablespoon olive oil
- 1 lemon (zested and juiced)

- Salt and pepper, to taste
- Fresh parsley or basil (for garnish)
- Grated Parmesan cheese (optional)
Instructions
Cook the Pasta
- Boil the Pasta: Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the pasta.
Prepare the Sauce
- Sauté the Garlic: While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
- Cook the Peas: Add the peas to the skillet and cook for 3-4 minutes, stirring occasionally, until they are heated through and tender.
- Make the Sauce: Stir in the ricotta cheese, lemon juice, and lemon zest. Season with salt and pepper. If the sauce is too thick, add some of the reserved pasta cooking water to reach your desired consistency.
Combine and Serve
- Toss the Pasta and Sauce: Add the drained spaghetti to the skillet and toss to combine, ensuring the pasta is well coated with the creamy sauce.
- Garnish and Serve: Plate the pasta and garnish with fresh parsley or basil. Optionally, top with grated Parmesan for an extra touch of flavor.
