For the Potatoes
- 2 pounds small potatoes (baby or Yukon gold)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and black pepper, to taste
For the Toppings
- 1½ cups shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- ¼ cup sour cream (optional)
- 2 tablespoons chopped fresh chives or green onions
Instructions
1️⃣ After roasting and smashing the potatoes, sprinkle shredded cheese evenly over each potato.
2️⃣ Add cooked, crumbled bacon on top of the cheese.
3️⃣ Return to the oven at 400°F (200°C) for 8–10 minutes, until the cheese is fully melted and bubbly.
4️⃣ Remove from the oven and finish with sour cream and chopped chives before serving.
