  • 2 lobster tails, cooked and meat removed, chopped
  • 12 ounces linguine pasta
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine (or seafood broth)
  • 1 lemon, juiced
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (for serving)

Instructions

Prepare the Pasta

  1. Cook Linguine: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.

Make the Scampi Sauce

  1. Melt Butter: In a large skillet over medium heat, melt the butter.
  2. Add Garlic: Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  3. Deglaze: Pour in the white wine (or seafood broth) and lemon juice, bringing the mixture to a simmer.
  4. Season: Season with salt and pepper to taste.
  5. Add Lobster: Gently fold in the chopped lobster meat, allowing it to heat through for about 2-3 minutes.

Combine and Serve

  1. Combine Pasta: Add the drained linguine to the skillet, tossing to coat in the sauce.
  2. Adjust Consistency: If the sauce is too thick, add reserved pasta water a little at a time until you reach the desired consistency.
  3. Plate: Serve the Lobster Scampi in bowls, garnished with chopped parsley and grated Parmesan cheese.
