Description
Bold, tangy, and slightly spicy pickled mushrooms that make the perfect snack or appetizer. Easy to prepare and packed with flavor, these Monster Bites are irresistible straight from the jar.
Ingredients
• 1 lb whole button mushrooms
• 1 cup white vinegar
• 1/2 cup water
• 2 tbsp sugar
• 1 tsp salt
• 3 cloves garlic, smashed
• 1 tsp mustard seeds
• 1/2 tsp red pepper flakes
• 1/2 tsp black peppercorns
• 1 tsp dried oregano or thyme
• 1 tbsp olive oil
Instructions
1. Clean mushrooms and lightly score the tops.
2. Boil salted water and blanch mushrooms for 5 minutes.
3. Drain and cool slightly.
4. Pack mushrooms into a clean jar with garlic, mustard seeds, red pepper flakes, peppercorns, and herbs.
5. Heat vinegar, water, sugar, and salt until dissolved.
6. Pour hot brine over mushrooms until fully submerged.
7. Drizzle olive oil on top, cool completely, seal, and refrigerate for 24 hours before serving.
