No-Bake Chocolate Peanut Butter Cookies Recipe

  • 3 cups quick-cooking oats

  • Pinch of salt

Instructions

Step 1: Prepare Your Workspace

Line two baking sheets with parchment paper or wax paper.
Set aside a spoon or cookie scoop.

Once the mixture is ready, you’ll need to work quickly.


Step 2: Cook the Chocolate Mixture

In a medium saucepan over medium heat, combine:

    • Sugar

    • Milk

    • Butter

    • Cocoa powder

Stir constantly until the butter melts and the mixture becomes smooth.

Bring the mixture to a full rolling boil.


Step 3: Boil Precisely

Once boiling, start a timer.

Let the mixture boil for exactly 60 seconds, stirring occasionally.

⚠️ This step is critical

    • Boil too little → cookies won’t set

    • Boil too long → cookies become dry and crumbly


Step 4: Remove from Heat and Add Peanut Butter

Immediately remove the saucepan from heat.

Stir in:

    • Peanut butter

    • Vanilla extract

    • Salt

Mix until completely smooth and glossy.


Step 5: Add the Oats

Stir in the oats all at once.

Mix thoroughly until every oat is coated.

The mixture will thicken quickly.


Step 6: Form the Cookies

Working quickly, drop spoonfuls of the mixture onto prepared baking sheets.

    • Use a cookie scoop for uniform size

    • Flatten slightly if desired


Step 7: Let Them Set

Allow cookies to rest at room temperature for 20–30 minutes until firm.

No refrigeration required.
