Pineapple Cowboy Candy – Sweet, Spicy & Totally Tropical

Description

Sweet pineapple simmered in tangy vinegar syrup with ginger and red pepper flakes.
Chill overnight for the ultimate sweet-spicy tropical topping.


Ingredients

• 1 medium fresh pineapple, peeled, cored, and diced

• 1 1/2 cups granulated sugar

• 3/4 cup apple cider vinegar

• 1 1/2 teaspoons red pepper flakes (adjust to taste)

• 1/2 teaspoon ground ginger

• Fresh mint leaves (optional, for garnish)


Instructions

1. Dice the pineapple into small chunks and set aside.

2. In a medium saucepan, whisk sugar, vinegar, red pepper flakes, and ginger until combined. Bring to a gentle boil over medium heat.

3. Add the pineapple to the pot, reduce heat to low, and simmer for 10 minutes, stirring occasionally.

4. Remove from heat and let cool for 30 minutes. Add mint leaves if using.

5. Spoon the pineapple and syrup into sterilized jars, seal tightly, and refrigerate for at least 24 hours to let the flavors meld.
