Protein Cottage Cheese Flourless Brownies

Brownies are one of those timeless desserts that almost everyone loves. They’re comforting, indulgent, and deeply satisfying—but traditional brownies often come with a long list of refined ingredients, including white flour, butter, and large amounts of sugar. While delicious, they aren’t always the best choice when you’re trying to eat a bit healthier or add more protein to your day.


Ingredients

  • 1 cup cottage cheese (full-fat or low-fat)

    2 large eggs

    1/2 cup unsweetened cocoa powder

    1/2 cup pure honey (or maple syrup, adjust to taste)

    1 teaspoon vanilla extract

    1/2 teaspoon baking powder

    1/4 teaspoon salt

    Optional: 1/4 cup chocolate chips or chopped walnuts


Instructions

Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two sides, and lightly grease the paper.

 

In a high-powered blender or food processor, blend the cottage cheese, honey, eggs, and vanilla extract for 1–2 minutes until completely smooth and creamy.

 

Add the cocoa powder, baking powder, and salt. Blend briefly until the batter is thick and uniform. Gently fold in chocolate chips or nuts if using.

 

Pour the batter into the prepared pan and spread evenly. Bake for 25–30 minutes, until the edges are set and a toothpick inserted in the center comes out with moist crumbs.

 

Let the brownies cool completely in the pan, then lift out using the parchment paper and slice into 9 squares.
