- 1 cup cottage cheese
- 2 ripe bananas, mashed
- 2 large eggs
- 1/3 cup honey
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- Pinch of salt
Instructions
- Preheat the oven: Set your oven to 350°F (175°C) and grease a standard loaf pan.
- Mash the bananas: In a large bowl, mash the bananas until smooth.
- Combine ingredients: Stir in the cottage cheese until mostly smooth. Add the eggs and honey, mixing until fully incorporated.
- Mix dry ingredients: In a separate bowl, combine the flour, baking soda, cinnamon, and salt.
- Incorporate dry into wet: Gently fold the dry ingredients into the wet ingredients until just combined.
- Pour and smooth: Pour the batter into the prepared loaf pan and smooth the top.
- Bake: Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
- Cool: Let cool briefly before removing from the pan and slicing.
