Instructions

  • Preheat the oven: Set your oven to 350°F (175°C) and grease a standard loaf pan.
  • Mash the bananas: In a large bowl, mash the bananas until smooth.
  • Combine ingredients: Stir in the cottage cheese until mostly smooth. Add the eggs and honey, mixing until fully incorporated.
  • Mix dry ingredients: In a separate bowl, combine the flour, baking soda, cinnamon, and salt.
  • Incorporate dry into wet: Gently fold the dry ingredients into the wet ingredients until just combined.
  • Pour and smooth: Pour the batter into the prepared loaf pan and smooth the top.
  • Bake: Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
