For the Pumpkin Beef Bolognese

  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz.) pumpkin puree
  • 1 can (14.5 oz.) diced tomatoes (with juices)
  • 1 cup beef broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1/2 cup grated Parmesan cheese (for serving)
  • Fresh parsley, chopped (for garnish)

Instructions

Cook the Beef

  1. Heat Oil: In a large skillet, heat the olive oil over medium heat.
  2. Add Onion: Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Add Garlic: Stir in the minced garlic and cook for another minute until fragrant.
  4. Brown Beef: Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon.

Make the Sauce

  1. Add Pumpkin: Stir in the pumpkin puree, diced tomatoes (with juices), and beef broth.
  2. Season: Add oregano, basil, salt, and pepper. Mix well to combine.
  3. Simmer: Bring the sauce to a simmer and reduce the heat to low. Let it cook for about 20 minutes, stirring occasionally.

Serve

  1. Prepare Pasta: While the sauce is simmering, cook your favorite pasta according to package instructions.
  2. Combine: Once the pasta is cooked, drain and add it to the skillet with the bolognese sauce. Toss to combine.
  3. Plate: Serve the Pumpkin Beef Bolognese in bowls, garnished with grated Parmesan cheese and chopped parsley.
