- 1 pound ground beef
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 can (15 oz.) pumpkin puree
- 1 can (14.5 oz.) diced tomatoes (with juices)
- 1 cup beef broth
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- 1/2 cup grated Parmesan cheese (for serving)
- Fresh parsley, chopped (for garnish)
Instructions
Cook the Beef
- Heat Oil: In a large skillet, heat the olive oil over medium heat.
- Add Onion: Add the chopped onion and sauté for about 5 minutes until translucent.
- Add Garlic: Stir in the minced garlic and cook for another minute until fragrant.
- Brown Beef: Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon.
Make the Sauce
- Add Pumpkin: Stir in the pumpkin puree, diced tomatoes (with juices), and beef broth.
- Season: Add oregano, basil, salt, and pepper. Mix well to combine.
- Simmer: Bring the sauce to a simmer and reduce the heat to low. Let it cook for about 20 minutes, stirring occasionally.
Serve
- Prepare Pasta: While the sauce is simmering, cook your favorite pasta according to package instructions.
- Combine: Once the pasta is cooked, drain and add it to the skillet with the bolognese sauce. Toss to combine.
- Plate: Serve the Pumpkin Beef Bolognese in bowls, garnished with grated Parmesan cheese and chopped parsley.
