1 cup tequila

1 cup water

1 cup sugar

1 package (3 oz) flavored gelatin – use multiple flavors/colors for rainbow effect

¼ cup rainbow gummy candie

1 tablespoon lime juice

1 tablespoon lemon juice

Ice pop molds

Popsicle sticks


Instructions

  1. Make the Simple Syrup: In a saucepan over medium heat, combine water and sugar. Stir until the sugar is completely dissolved. Remove from heat and let cool slightly.
  2. Add the Flavor: Once cooled, stir in the tequila, lime juice, and lemon juice. This is your base liquid.
  3. Divide & Color: Split the mixture evenly into separate bowls—one for each gelatin flavor. Add the gelatin powder to each bowl, whisking well until completely dissolved.
  4. Begin Layering: Start with your first color. Pour a thin layer into the molds and freeze for about 30 minutes, or until slightly firm.
  5. Add Gummy Candies: Once the first layer is set, add a few rainbow gummies to each mold. Gently press them into the layer.
  6. Continue Building: Repeat the process with remaining gelatin colors, adding a new layer every 30 minutes, and more gummies between layers if desired.
  7. Freeze Until Firm: After the final layer, insert the sticks and freeze the pops for at least 4 hours, or until fully solid.
  8. Unmold and Enjoy: Run warm water over the outside of the molds for a few seconds to easily release the pops.

Notes

Make It Spicy: Add a dash of chili-lime seasoning or Tajín between layers.
Use Fruit Juice Instead: Substitute part of the water with fruit juice for extra flavor.
Mocktail Version: Skip the tequila for a kid-friendly or alcohol-free treat.
