- 3 cups raspberries, fresh or frozen
- ½ cup granulated sugar
- 2 tablespoons lemon juice
- 2 tablespoons cornstarch
- 2 tablespoons water (to mix with the cornstarch)
- Optional: ½ teaspoon vanilla extract for a softer, rounded flavor
For the Creamy Vanilla Frosting
This frosting ties everything together with a smooth, velvety layer between and around the cake.
- 1 cup unsalted butter, softened
- 8 oz (225 g) cream cheese, softened (for richness and tang)
- 4 cups powdered sugar, sifted
- 2 teaspoons vanilla extract
- 2–3 tablespoons heavy cream or milk, as needed for consistency
- Pinch of salt (to balance the sweetness)
