Shrimp Pesto Pasta with Spinach and Mushrooms

For the Pasta Dish

  • 12 ounces linguine or fettuccine pasta
  • 1 pound shrimp, peeled and deveined
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 4 tablespoons pesto (store-bought or homemade)
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • Grated Parmesan cheese (for serving)

Instructions

Cook the Pasta

  1. Boil Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.

Sauté the Vegetables and Shrimp

  1. Heat Oil: In a large skillet over medium heat, add the olive oil.
  2. Cook Garlic: Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add Mushrooms: Stir in the sliced mushrooms and cook for 3-4 minutes, or until they are tender.
  4. Add Shrimp: Add the shrimp to the skillet, seasoning with salt and pepper. Cook for 3-5 minutes, or until the shrimp are pink and opaque.
  5. Add Spinach: Stir in the fresh spinach and cook until wilted, about 2 minutes.

Combine and Serve

  1. Combine Pasta and Sauce: Add the drained pasta and pesto to the skillet, tossing to combine. If needed, add reserved pasta water a little at a time to reach the desired consistency.
  2. Plate: Serve the Shrimp Pesto Pasta in bowls, garnished with grated Parmesan cheese.
