For the Pasta Dish
- 12 ounces linguine or fettuccine pasta
- 1 pound shrimp, peeled and deveined
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 4 tablespoons pesto (store-bought or homemade)
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper, to taste
- Grated Parmesan cheese (for serving)
Instructions
Cook the Pasta
- Boil Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.
Sauté the Vegetables and Shrimp
- Heat Oil: In a large skillet over medium heat, add the olive oil.
- Cook Garlic: Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add Mushrooms: Stir in the sliced mushrooms and cook for 3-4 minutes, or until they are tender.
- Add Shrimp: Add the shrimp to the skillet, seasoning with salt and pepper. Cook for 3-5 minutes, or until the shrimp are pink and opaque.
- Add Spinach: Stir in the fresh spinach and cook until wilted, about 2 minutes.
Combine and Serve
- Combine Pasta and Sauce: Add the drained pasta and pesto to the skillet, tossing to combine. If needed, add reserved pasta water a little at a time to reach the desired consistency.
- Plate: Serve the Shrimp Pesto Pasta in bowls, garnished with grated Parmesan cheese.
