Shrimp Stuffed Mushrooms

For the Stuffed Mushrooms

  • 12 large mushrooms, stems removed
  • 8 oz. cream cheese, softened
  • 1 cup cooked shrimp, chopped (fresh or frozen, thawed)
  • 1/2 cup breadcrumbs (plain or seasoned)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Olive oil, for drizzling

Instructions

Prepare the Mushrooms

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Clean the Mushrooms: Gently wipe the mushrooms with a damp cloth to remove any dirt. Remove the stems and set aside.
  3. Prepare Baking Dish: Lightly grease a baking dish with cooking spray or olive oil.

Make the Filling

  1. Mix Ingredients: In a medium bowl, combine the softened cream cheese, chopped shrimp, breadcrumbs, Parmesan cheese, parsley, lemon juice, garlic powder, salt, and pepper. Mix until well combined.
  2. Fill the Mushrooms: Spoon the shrimp mixture into each mushroom cap, pressing down gently to pack the filling.

Bake the Stuffed Mushrooms

  1. Arrange in Baking Dish: Place the stuffed mushrooms in the prepared baking dish.
  2. Drizzle with Olive Oil: Lightly drizzle olive oil over the top of the stuffed mushrooms.
  3. Bake: Bake in the preheated oven for 15-20 minutes, or until the mushrooms are tender and the filling is golden brown.
  4. Cool Slightly: Remove from the oven and let cool for a few minutes before serving.
