Slow Cooker Peach Butter

Description

A simple, rich, and naturally sweet fruit spread made with slow-cooked peaches. This Slow Cooker Peach Butter develops deep flavor and a silky texture with minimal effort.


Ingredients

• 2 pounds fresh of frozen peach slices

• 2/3 cup sugar

• juice from ½ lemon

• 2 tbsp apple juice or water


Instructions

1. Place the peach slices, sugar, lemon juice, and apple juice (or water) into a slow cooker. Stir to combine.

 

2. Cover and cook on low for 6–8 hours, stirring occasionally, until the peaches are very soft and the mixture has thickened.

 

3. Once the mixture has reduced and darkened slightly, use an immersion blender to purée it until completely smooth (or carefully transfer to a blender in batches).

 

4. Continue cooking uncovered on low for another 1–2 hours, stirring occasionally, until the peach butter is thick and spreadable.

 

5. Let it cool slightly, then transfer to sterilized jars. Store in the refrigerator for up to 2 weeks or freeze for longer storage.
