Gather the following ingredients to make your Spaghetti with Crispy Zucchini:
- 300g spaghetti
- 2 medium zucchinis, thinly sliced into rounds
- 3 cloves garlic, minced
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup olive oil (for frying)
- 1/4 cup grated Parmesan cheese (optional)
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
Cook the Spaghetti
- Boil Water: Bring a large pot of salted water to a boil.
- Cook Pasta: Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
Prepare the Zucchini
- Coat the Zucchini: In a bowl, toss the zucchini slices with flour, salt, and black pepper to coat evenly.
- Fry the Zucchini: Heat olive oil in a large skillet over medium heat. Fry the zucchini slices in batches until golden and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
Prepare the Sauce
- Sauté Garlic: In the same skillet, remove excess oil and add minced garlic. Sauté for 1-2 minutes until fragrant.
- Combine with Pasta: Add the cooked spaghetti to the skillet, tossing it in the garlic-infused oil. Add reserved pasta water as needed to loosen the sauce.
Assemble the Dish
- Top with Zucchini: Plate the spaghetti and arrange the crispy zucchini rounds on top.
- Finish with Garnish: Sprinkle with grated Parmesan, red pepper flakes, and fresh parsley for a vibrant, flavorful finish.
