For the Chicken and Marinade

  • 4 bone-in, skin-on chicken thighs (or breasts if preferred)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder

  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

For the Sticky Glaze

  • 1/2 cup brown sugar (packed)
  • 1/4 cup honey
  • 1/4 cup balsamic vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon ground ginger
  • 2 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper flakes (optional for a little heat)

Instructions

Prepare the Chicken

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Season the Chicken: Rub the chicken thighs with olive oil, salt, pepper, garlic powder, onion powder, and thyme. Ensure the chicken is evenly coated with the seasonings.
  3. Let it Marinate: Allow the chicken to marinate for at least 15 minutes or up to an hour for more flavor.

Make the Sticky Glaze

  1. Combine the Glaze Ingredients: In a small saucepan, whisk together brown sugar, honey, balsamic vinegar, soy sauce, Dijon mustard, ginger, garlic, and red pepper flakes (if using).
  2. Simmer the Glaze: Bring the mixture to a simmer over medium heat, stirring occasionally. Let it cook for 5-7 minutes until the glaze thickens slightly. Remove from heat and set aside.

Roast the Chicken

  1. Place the Chicken in the Oven: Arrange the marinated chicken thighs on a baking sheet lined with parchment paper or foil.
  2. Bake the Chicken: Roast for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).
  3. Glaze the Chicken: After the chicken has cooked for 30 minutes, remove it from the oven and brush the sticky glaze over each piece. Return the chicken to the oven for an additional 10-15 minutes, basting the chicken once or twice with more glaze as it cooks. This will create a beautiful, caramelized coating.
  4. Finish Roasting: Once the chicken is golden and the glaze is sticky and glossy, remove it from the oven.

Serve and Enjoy

  1. Rest the Chicken: Let the chicken rest for 5 minutes before serving, to allow the juices to redistribute.
  2. Serve: Garnish with additional fresh thyme if desired, and serve with your favorite holiday sides.
