- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 1 cup pumpkin puree
- 1 egg

- 8 oz. cream cheese, softened (for the frosting)
- ¼ cup unsalted butter, softened (for the frosting)
- 3 cups powdered sugar (for the frosting)
- 1 teaspoon vanilla extract (for the frosting)
- ½ teaspoon cinnamon (for the frosting)
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the egg, pumpkin puree, and vanilla extract, and mix until smooth.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Spread the cookie dough evenly into the prepared baking pan. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
- For the frosting, beat the cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar, vanilla extract, and cinnamon, and beat until light and fluffy.
- Once the bars are completely cool, spread the frosting evenly over the top. Slice into bars and serve.
