  • 1 ½ cups granulated sugar
  • 1 cup pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  •  ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 8 oz. cream cheese, softened (for the frosting)
  • ¼ cup unsalted butter, softened (for the frosting)
  • 3 cups powdered sugar (for the frosting)
  • 1 teaspoon vanilla extract (for the frosting)
  • ½ teaspoon cinnamon (for the frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2.  In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the egg, pumpkin puree, and vanilla extract, and mix until smooth.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  4. Spread the cookie dough evenly into the prepared baking pan. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
  5. For the frosting, beat the cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar, vanilla extract, and cinnamon, and beat until light and fluffy.
  6. Once the bars are completely cool, spread the frosting evenly over the top. Slice into bars and serve.
