Ingredients

r the Mango Layer

    • Fresh ripe mangoes (diced and puréed)

    • Granulated sugar or honey (to taste)

    • Lemon or lime juice (for brightness)

For the Cream Layer

    • Mascarpone cheese (or cream cheese substitute)

    • Heavy whipping cream

    • Powdered sugar

    • Vanilla extract

For the Biscuit Layer

    • Ladyfinger biscuits (savoiardi)

    • Mango juice or mango purée diluted with water

Optional Garnishes

    • Fresh mango cubes or slices

    • Whipped cream

    • White chocolate shavings

    • Mint leaves

    • Edible flowers


Choosing the Best Mangoes

Mangoes are the star of this dessert, so choosing ripe, flavorful fruit makes all the difference.

Look for mangoes that are:

    • Fragrant

    • Slightly soft when pressed

    • Vibrant in color

Avoid underripe mangoes—they lack sweetness and won’t blend smoothly. Frozen mango can work in a pinch, but fresh mango delivers the best flavor and texture.


Instructions

Step 1: Prepare the Mango Purée

Peel and dice ripe mangoes.

Blend until smooth, adding:

  • A little sugar or honey (to taste)
  • A splash of lemon or lime juice

Set aside. Reserve some diced mango for layering.


Step 2: Make the Cream Filling

In a large bowl, beat mascarpone until smooth.

Add powdered sugar and vanilla extract, mixing gently.

In a separate bowl, whip heavy cream until soft peaks form.

Fold the whipped cream into the mascarpone mixture until light, fluffy, and smooth.

This cream should be airy, not dense.


Step 3: Prepare the Ladyfingers

Pour mango juice or diluted mango purée into a shallow dish.

Quickly dip each ladyfinger—do not soak—just enough to moisten.

Over-soaking will cause the layers to collapse.


Step 4: Assemble the Layers

In a serving dish or baking pan:

  1. Arrange a layer of mango-soaked ladyfingers
  2. Spread a generous layer of cream
  3. Spoon mango purée and diced mango evenly over the cream

Repeat the layers until ingredients are used, finishing with a cream layer on top.

Smooth the surface gently.


Step 5: Chill and Set

Cover and refrigerate for at least 4 hours, preferably overnight.

This allows the biscuits to soften and the flavors to fully develop.


Step 6: Garnish and Serve

Just before serving, garnish with:

  • Fresh mango cubes
  • Whipped cream
  • White chocolate shavings
  • Mint or edible flowers

Slice or spoon gently and serve chilled.
