Ingredients
Scale
For the Gravy
- 1/4 cup turkey drippings (from roasted turkey)
- 1/4 cup all-purpose flour
- 3 cups low-sodium turkey or chicken broth
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper (adjust to taste)
- 1 teaspoon dried thyme or rosemary (optional)
Instructions
Collect Turkey Drippings
- Prepare Drippings: After roasting your turkey, carefully pour the drippings from the roasting pan into a measuring cup.
- Let Sit: Allow the drippings to sit for a few minutes, so the fat rises to the top. Skim off excess fat if desired.
Make the Roux
- Heat Drippings: In a large saucepan, add 1/4 cup of the reserved turkey drippings over medium heat.
- Add Flour: Whisk in 1/4 cup of all-purpose flour, stirring continuously for about 2 minutes until the mixture turns golden brown (this is the roux).
Add Broth and Seasonings
- Gradually Add Broth: Slowly pour in 3 cups of turkey or chicken broth while whisking to prevent lumps.
- Season: Add salt, black pepper, and optional dried thyme or rosemary. Bring to a simmer.
Thicken the Gravy
- Simmer: Allow the gravy to simmer for about 10-15 minutes, stirring occasionally until thickened to your desired consistency.
- Adjust Seasoning: Taste and adjust salt and pepper as needed.
Serve
- Transfer to Gravy Boat: Pour the gravy into a serving dish or gravy boat.
- Enjoy: Serve hot over your turkey and sides.
