- 2 lbs (900 g) boneless, skinless chicken thighs or breasts

- 1 tablespoon Dijon mustard

- 1 teaspoon dried Italian seasoning or thyme

- Season the Chicken
Pat the chicken dry and season generously with salt, pepper, and paprika on both sides. - Sear the Chicken
Heat olive oil in a large skillet over medium-high heat.
Add the chicken and cook for 4–5 minutes per side, until golden brown and cooked through. Remove from the pan and set aside. - Make the Sauce
Reduce heat to medium. Add butter to the skillet.
Stir in minced garlic and cook for 30 seconds, until fragrant. - Create the Creamy Base
Pour in the heavy cream, Dijon mustard, honey, and Italian seasoning.
Simmer for 3–5 minutes, stirring, until slightly thickened. - Combine
Return the chicken to the skillet and spoon the sauce over the top.
Simmer for 2–3 minutes to allow the flavors to meld. - Serve
Garnish with fresh herbs and serve hot.
