Description
Crispy baguette slices are topped with buttery garlic shrimp, mozzarella, Parmesan, mayonnaise, herbs, and spices, then baked until melted and bubbly. These cheesy garlic shrimp baguette toasts are easy, flavorful, and perfect for parties, holidays, game day, or a warm seafood appetizer.
Ingredients
1. 1 French baguette, sliced into even pieces
2. 1 lb / 450 g large shrimp, peeled and deveined
3. 2 tbsp butter
4. 1 tbsp olive oil
5. 2 garlic cloves, minced
6. 1 cup shredded mozzarella cheese
7. 1/2 cup shredded Parmesan cheese
8. 2 tbsp mayonnaise
9. 1 tbsp fresh parsley, chopped and divided
10. 1/2 tsp paprika
11. 1/2 tsp Italian seasoning
12. Salt, to taste
13. Black pepper, to taste
Instructions
1. Preheat the oven to 375°F / 190°C.
2. Arrange the sliced baguette pieces in a single layer on a baking sheet.
3. Toast the baguette slices in the oven for 5 minutes, just until lightly crisp. Remove from the oven and set aside.
4. Pat the shrimp dry with paper towels so they sear better in the skillet.
5. Season the shrimp with paprika, Italian seasoning, salt, and black pepper.
6. Heat the butter and olive oil in a skillet over medium-high heat.
7. Add the seasoned shrimp to the skillet in a single layer.
8. Cook the shrimp for 1 to 2 minutes per side, or until pink, lightly golden, and just cooked through.
9. Remove the shrimp from the skillet and let them cool slightly.
10. Reserve a few whole shrimp for topping the baguette toasts, if desired.
11. Chop the remaining shrimp into small bite-sized pieces.
12. In a mixing bowl, combine the chopped shrimp, shredded mozzarella cheese, shredded Parmesan cheese, mayonnaise, minced garlic, and half of the chopped parsley.
13. Stir until the cheesy shrimp mixture is evenly combined.
14. Spoon the cheesy shrimp mixture onto the toasted baguette slices, spreading it evenly over each piece.
15. Place one reserved whole shrimp on top of each toast if you have enough shrimp.
16. Bake for 8 to 10 minutes, or until the cheese is melted, bubbly, and lightly golden.
17. Remove from the oven and sprinkle with the remaining chopped parsley.
18. Serve warm.
Notes
Toast the baguette slices before adding the shrimp topping to help keep them crisp. Do not overcook the shrimp in the skillet because they will continue cooking in the oven. For extra flavor, add a squeeze of lemon juice, red pepper flakes, or a little hot sauce to the cheesy shrimp mixture.
