1. 1 pound large shrimp, peeled and deveined

2. 1 1/2 cups fresh green beans, trimmed

3. 2 large carrots, cut into thin sticks

4. 2 tablespoons olive oil

5. 4 tablespoons butter, cubed

6. 3 cloves garlic, minced

7. 1 cup shredded mozzarella cheese

8. 1 teaspoon Italian seasoning

9. 1/2 teaspoon crushed red pepper flakes, optional

10. 1 teaspoon salt

11. 1/2 teaspoon black pepper

12. 2 tablespoons fresh parsley, chopped

13. 1 tablespoon fresh lemon juice


Instructions

1. Lay out 4 large sheets of heavy-duty aluminum foil on a clean work surface.

2. Drizzle a little olive oil in the center of each foil sheet, dividing the 2 tablespoons evenly between all 4 sheets.

3. Divide the trimmed green beans and carrot sticks evenly between the foil sheets, placing the vegetables in the center of each sheet.

4. Season the vegetables evenly with salt, black pepper, and Italian seasoning.

5. Place the peeled and deveined shrimp evenly over the vegetables in each packet.

6. Sprinkle the minced garlic evenly over the shrimp and vegetables.

7. Scatter the cubed butter over the shrimp and vegetables, dividing it evenly between the 4 packets.

8. Top each packet with shredded mozzarella cheese.

9. Sprinkle crushed red pepper flakes over the top if you want a little heat.

10. Fold each foil sheet tightly over the filling and seal the edges well to create closed packets.

11. To bake, place the foil packets on a baking sheet and bake at 400°F for 12 to 15 minutes, or until the shrimp are pink and opaque and the vegetables are tender.

12. To cook in a skillet, place the sealed packets in a covered skillet over medium heat and cook for 12 to 15 minutes, or until the shrimp are fully cooked and the vegetables are tender.

13. Carefully open the packets, keeping your face and hands away from the hot steam.

14. Drizzle the cooked shrimp and vegetables with fresh lemon juice.

15. Sprinkle with chopped fresh parsley and serve immediately.

Notes

For a bubbly golden cheese finish, carefully open the packets during the last 2 minutes of cooking and place them briefly under the broiler. Watch closely so the cheese does not burn.

Use large shrimp for the best texture. If using frozen shrimp, thaw completely and pat dry before assembling the packets.

Cut the carrots into thin sticks so they cook evenly with the shrimp and green beans.
